Lumière Champagne Dinner Introduces Cuvée Daniel

Pierre Paillard, Taittinger, Henriot, and Nicolas Feuillatte

Grand Chef Dale MacKay of our sister restaurant Lumière invites you to join him for a very special Champagne evening to celebrate the arrival of Cuvée Daniel - Chef Boulud's private brand of Champagne from Pierre Paillard's celebrated vineyards in Bouzy, Champagne, France.

 

cuvee-danielR.jpgExtraordinary Champagnes from the great houses of Taittinger, Henriot and Nicolas Feuillate join Pierre Paillard's Cuvée Daniel - each pairing with one of Lumière's Five Diamond class courses.

 

Chef's MacKay and Boulud are working together - Dale in Vancouver and Daniel from New York - to design a very special four course menu (plus amuse bouche) just for the occasion.

 

This very special champagne dinner is offered for $165 per person. TaittingerR.jpgTaittinger: Taittinger is a French wine family, famous for producing Champagne. Headed by Claude Taittinger (born 1927), the Taittinger Group is ranked in the top 250 businesses in France. The house style at Taittinger is elegance with creamy richness.    Taittinger Nocturne Sec NV: A "Sec" Champagne with a finished blend of over 35 'crus' from several different harvests, perfectly matured.  Aged on yeast for at least four years before disgorgement.  A dosage of 20g cane sugar per litre is added which combined with the beautifully rounded quality and maturity of the wine, gives it a highly distinctive body and smoothess.  The colour is pale yellow with shimmering highlights.  The bubbles form a delicate necklace of fine mousse.  Its nose is subtle and fresh, suggestive of the delightful aromas of white blossom and ripe fruit, with overtones of yellow peaches and dried apricots.  The palate is soft and meoow and remains very fresh.  Dominated by flavours reminiscent of raisins and fruit in syrup.

 

HenriotR.jpgHenriot: Henriot is a Champagne producer based in the Reims region of Champagne. The house, founded in 1808, produces both vintage and non-vintage cuvee. Henriot has been under family ownership since 1994 when Joseph Henriot left Veuve Cliquot to manage the estate.

 

 

nicolas-champagneR.jpgNicolas Feuillate: Nicolas Feuillatte created his brand in 1976, after inheriting a vineyard near  Reims, the Domaine de Bouleuse. Champagne Nicolas Feuillatte is an exception in a world where leading brands build their reputations on long histories. Nicolas Feuillatte Brut Rosé is a blend of 10% Chardonnay for elegance and finesse, 60% Pinot Noir for roundness and structure, and 30% Pinot Meunier for fruit quality.  The wine is a copper-tinged salmon pink with glints of silver and a perfectly balanced ribbon of fine bubbles. Initially subtle on the nose showing red fruit aromas, it evolves into an intense bouquet effusing blueberries, blackcurrants and raspberries.
